TT is a multifaceted building, the converted Victorian police station is home to a liquor store, garden roof terrace restaurant, ground floor restaurant, private orangery dining room, subterranean cocktail bar, tasting vaults, independent cinema, and 4 purpose-built cocktail making studios upstairs. The garden roof terrace boasts an outdoor cooking stage that the dining area overlooks, we also have a newly opened ground floor restaurant.
The food is centred around cooking over fire, pickling in house and wood smoking. Working under ex- Oren head chef Sam Lone.
We are looking for experienced CDPs who can run different sections of the kitchen, accountable and driven chefs that have at least 2 years of experience that are looking for a new challenge.
Experience with open fire cookery is welcomed but not essential, full training will be given.
Responsibilities:
Clear understanding of food preparation, and kitchen operations.
Assist in the creation of innovative and high-quality dishes.
Maintain food quality, taste, and presentation to meet or exceed guest expectations.
Manage inventory, ordering, and cost control to optimise profitability.
Ensure compliance with health and safety regulations and food safety standards.
Maintain kitchen cleanliness and organisation to meet hygiene standards.
Enforce kitchen policies and procedures.
Foster a positive and collaborative work environment within the kitchen.
Qualifications:
Proven experience as a CDP in a busy, high quality restaurant
Strong leadership and team management skills.
Creative culinary vision and passion for food.
Knowledge of kitchen equipment, techniques, and industry best practices.
Excellent organisational and communication skills.
Ability to work under pressure and maintain high culinary standards.
Level 2 food hygiene certificate
