University Arms is a 192-bedroom design-led Hotel situated in the heart of Cambridge, United Kingdom. Overlooking Parkers Piece is the Hotels quintessentially British Restaurant and Bar, Parkers Tavern, Library Lounge, and beautiful wood-panelled Ballroom. Opened in 1834 as a Coaching Inn, University Arms is Cambridges oldest Hotel. For 180 years the Hotel was added to, updated, and modernised in the line with the age, however, it was the reopening in 2018 after a four-year £80m full renovation that really positioned the Hotel. It is now Cambridges go to destination, alluring visitors with the promise of a sense of modern luxury.
The Role
As a Kitchen Manager, you're responsible for overseeing all aspects of the kitchen operations in a restaurant or food service establishment. Your duties typically include:
Culture - Take the reins in the kitchen, whether you are making decisions or coming up with ways to help the team run better together.
Menu Planning - Collaborating with the senior chefs to develop menus that are both appealing to guests and financially viable for the business.
Ordering and Inventory Management - Ensuring that the kitchen is well-stocked with ingredients and supplies and managing inventory levels to minimise waste and control costs.
Staff Supervision Support with Hiring, training, and scheduling kitchen staff, as well as providing ongoing supervision to ensure that all tasks are completed efficiently and to high standards.
Food Safety and Hygiene - Ensure compliance at all times with all Health and Safety, Food Hygiene and other regulations, policies and procedures.
Quality Control Support the senior chefs with monitoring food quality and presentation to ensure that all dishes meet the restaurant's standards and customer expectations.
Cost Control - Monitoring food and labour costs to maximise profitability, including implementing strategies to reduce waste and improve efficiency. Manage stock levels and oversee the purchasing process.
Problem Solving - Addressing any issues or challenges that arise in the kitchen, such as equipment malfunctions, staffing shortages, conflict, or guest complaints.
Communication - Maintaining open lines of communication with front-of-house Team Members, management, and suppliers to ensure smooth operations and address any concerns or feedback.
People Management line managing the Goods Receiver and the Stewards Team.
About You
To be successful in this role, the ideal candidate will have proven culinary and management experience.
Be an excellent communicator, who is personable and who will engage with the kitchen team in a positive and considerate way, coaching, mentoring and effecting change without conflict.
Creative and innovative thinking, resourceful, good negotiator. The ability to communicate effectively with our clients, suppliers and internal teams is deemed a crucial part of the role.
Commercial acumen profit and value-conscious.
An ability to lead on health and safety, risk, food hygiene and allergen policies.
Willing to work flexibly and ensure tasks are completed to a high standard
Ability to thrive in a fast-paced environment, multitask, and prioritise responsibilities .
