ABOUT THE PROPERTY

W Edinburghwill bring bold architecture and a vibrant lifestyle offering to the Scottish capital. Behind a faade featuring a winding steel ribbon reflecting the citys festival spirit this 12-storey structure will be the centerpiece of Nuveen Real Estate s Edinburgh St James Quarter, incorporating retail, leisure and entertainment facilities along with residential apartments.

This W hotel aims to help redefine the citys hospitality landscape. Accordingly, itll fuse the brands signature amenities with modern design and W Happenings, highlighting whats new in design, fashion, music and culture.

The new W hotel will accommodate guests across 244 stylish guestrooms, including 42 suites. While staying here, guests will benefit from the brands signature Whatever / Whenever service philosophy.

A real highlight of this property will be its rooftop bar and outdoor terrace, pairing exciting cocktails and cuisine with 360-degree views over the historic city. Among the other noteworthy amenities planned are the W Lounge,a restaurant collaboration with SUSHISAMBA, a FIT workout facility and an AWAY spa, with special functions hosted in 2,450 sq ft of modern event space.

ABOUT THE ROLE

Reporting to the Executive Chef of W Edinburgh, the Head Sushi Chef of SUSHISAMBA at W Edinburgh will have overall responsibility for directing the daily operation of the sushi production within SUSHISAMBA restaurant kitchen. This highly specialized role requires several years of previous experience working with a similar cuisine.

Joining the team means you will be instrumental to the success of the hotel and the restaurants operations and beyond. We are looking for someone who is organised, creative and passionate!

As Head Sushi Chef of SUSHISAMBA, key aspects of your role will include:

Recruit and retain the best talent on the market

Design and implement the restaurant kitchens policies and procedures

Develop, design and implement new menus in collaboration with the Executive Chef and SUSHISAMBA team

Develop teamwork throughout your teams as they grow

Train, motivate and lead your team to produce their best work and recreate the menu to approved standards

Promote a positive work environment

Be a W brand ambassador, ensuring the brands voice is present in your interactions with guests and talent

Maintain food hygiene and sanitation standards

Ensure the highest levels of food quality are maintained

Manage department budgets ensuring the maximization of profit while maintaining guest and employee satisfaction

Work in collaboration with all heads of departments to ensure a successful hotel opening and beyond

Our ideal Head Sushi Chef of SUSHISAMBA is someone who has:

Demonstrated decision-making and problem-solving skills

Natural leadership skills

Strong organization and multi-tasking skills

Sophisticated communication skills

The ability to train others with patience and confidence

Previous experience working in sushi production or similar cuisine in high-end, high-volume restaurants

At least three years of previous management experience

A positive mindset

A genuine passion for working in hospitality
