Bar Manager | Harborne, Birmingham | £36,000 to £40,000 + circa £4,000 tronc
What's in it for the successful Bar Manager?
Salary of £36,000 to £40,000 per annum
Tronc of circa £4,000 per annum on top
45 hours per week, permanent
Closed Mondays and Tuesdays, so two fixed consecutive days off every week
One daytime service on a Sunday with an early finish

Tonic are pleased to partner with University College Birmingham on their new commercial restaurants, and are recruiting a Bar Manager for their new site in Harborne, Birmingham. This is a commercial restaurant and bar. It is not a training site and you will not be teaching. The bar here is a business in its own right rather than a service station, because it trades right through the afternoon between the lunch and evening services. That means your list has to work for an afternoon drink as well as alongside small plates in the evening, and you will write all of it. The site trades Wednesday to Sunday, so you get the same two consecutive days off every week.
What are we looking for from Bar Manager candidates?
Experience as a Bar Manager, or a strong Assistant Bar Manager ready to step up, in a quality-led bar or restaurant
Able to write, cost and train out a drinks list of your own
Real ownership of ordering, stock, wastage and GP
Understands how a bar trades differently across an afternoon and an evening
A trainer of bartenders who holds a standard rather than hopes for one
Personal licence holder, or willing to obtain one
Available Wednesday to Sunday, including evenings and the Sunday daytime service
